Defined - a generic form of the type taken from the source metadata.
Inferred - when column analysis is run, it looks at every distinct values and tries to find the smallest data type it can successfully fit in. The smallest type that they could all successfully fit in will be the inferred type for the column.
Chosen - when you review the results, you get to go along with the inferred data type, or pick another. This might (ie can't remember for sure) cause values that can't be converted to the chosen type to now be considered invalid values by IA.

When you're new to anything it's worth while spending some time with the manual. I do, Stuart does. His answer is apposite.
