I'm at a really basic level - I have mainframe background - COBOL, DB2, IMS, CICS, JCL, etc). Can anyone show me some sample code to give me an idea of what AuditStage would look like?

Code? That's not how these products work. They each have a graphical user interface. Audit Stage (formerly known as Quality Manager) collects a sample of data and performs various metrics.
Best advise is to get in touch with your vendor and ask for some marketing collateral - glossy brochures with pictures of what the tools look like in use. You don't have to believe all the words that surround them!
